Gear Options For Toasting The Bread
Camp Cooking Tip: I use many different methods to toast bread on camping trips.
If I have a campfire going, I will toast the bread over hot coals using a grill grate over a campfire. This Texsport Heavy Duty Over Fire Camp Grill is made with heavy-duty folding steel and isdesigned to handle heavy cast iron cookware. The legs fold for easy transportation and storage.
Your propane camp stove works well too. When we are toasting bread with our propane camp stove, we use a camp stove toaster like this Stansport Folding Camp Stove Toaster. It is made ofrust resistant steel and folds for easy storage.
When I took the pictures for this blog post, we were camping with fire restrictions so I used a propane grill to toast the bread. When I made this recipe and took photos for this post, I toasted the bread using this Weber Go-Anywhere Gas Grill which uses 1-pound propane bottles (the same kind you use with your camp stove.) This grill produces 6500 BTU-per-hour and has a 160 square-inch total cooking area.
How To Make Strawberry Bruschetta
Chop a few ingredients, grill a few slices of bread and layer it all to make a camping appetizer fit for a 5-star restaurant. Your foodie friends will love this slightly sweet and savory quick appetizer, it’s one of the best camping snacks for a “fancy” meal.
Step 1. Set Up Your Cooking Environment. This Strawberry Basil Bruschetta is almost a “raw” no-cook recipe except for toasting the bread.
Step 2. Macerate The Berries. Combine the balsamic vinegar, olive oil, sugar, salt, pepper, strawberries and basil in a non-reactive bowl and set aside to macerate the strawberries.
Step 3. Get Goat Cheese To Room Temperature. You’ll need the goat cheese warm enough to be at a spreadable consistency so get it out of your camp cooler or RV refrigerator.
Step 4. Toast The Bread. Now you’ll drizzle a bit of olive oil on both sides of the bread … then toast it with whichever method you choose.
Step 5. Top The Bread. Spread equal amounts of goat cheese on the bread then spoon the strawberry mixture on top.
Step 6. Garnish And Serve. Finish off the bruschetta with a bit more basil before serving. Enjoy!
Substitutions
A balsamic glaze goes really well with almost any kind of fruit. Instead of strawberries you can use blueberries, raspberries, peaches or cherries.
Not a goat cheese fan? Try substituting cream cheese or mascarpone.

Equipment
Heavy Duty Over Fire Camp Grill Grate (for toasting bread over campfire coals, you can also use a toaster, propane grill or cast iron pan with a camp stove or place on baking sheet in and toast under broiler in oven.)
Ingredients
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil divided
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup strawberries cubed
- 8 large fresh basil leaves sliced and divided
- 1/2 cup goat cheese
- 8 slices Italian baguette bread about 1/2 – 3/4 inch thick
Instructions
In a non-reactive medium bowl, toss the balsamic vinegar, 1 tablespoon olive oil, sugar, salt, pepper, strawberries and 4 sliced basil leaves. Set aside to macerate the berries.
Bring the goat cheese to room temperature.
Slice the bread and drizzle both sides with olive oil.
On a preheated grill, campfire or propane stove, toast the baguette slices until browned, about 3 minutes per side. (Or, preheat oven broiler, toast bread slices on baking sheet.)
Spread the goat cheese on the toasted crostinis then spoon berry mixture over the cheese.
Garnish with remaining basil leave slices and serve.
