This past weekend, we headed to the beautiful Kern River area and set up tent at a campsite right next to the water.
We went water rafting.
We got thrown off our raft after we hit a rock and went down this rapid on my back. Ouch!
It wouldn’t be camping without making any smores. We did a twist on the classic and made marshmallow and reeses peanut butter cups smores 🙂
But more on that fun camping trip later…..
I want to give you a recipe for a delicious snack bar. I made these to bring as snacks while we were camping.
They were chewy and moist. It had banana chips, toasted coconuts and dark chocolate chips….all the above, I love!!
Chunky Monkey Snack Bars
Ingredients:
- 2 cups old-fashioned oats
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup canola oil
- 2 eggs
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup chopped dried banana chips
- 1/2 cup toasted coconuts
- 1/2 cup dark chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Spray 8″ X 8″ baking pan with non-stick cooking spray.
- In a large mixing bowl, combine ingredients until smooth.
- Spread batter in prepared baking pan and bake for approximately 25-30 minutes until bars are cooked all the way through.
- Let bars cool completely in pan before cutting. I let the bar cool overnight and they come out chewy.

I love all these flavors too! Recently I’ve been obsessed with the banana chips from Trader Joe’s, and this seems like a great recipe for them.

I’ve whitewater rafted the Kern R too! Except it was like in 2004 and I LOVED it!
Those bars have my name on it — please return to owner 😉

I am going to continue doing Project Life this year. I jumped right in mid summer last year and have completed plenty of layouts/pages for 2013. I wasn’t as consistent as I would have liked, but I did complete the big moments and the holidays. I enjoy the process a lot and love the finished […]
Thrive
This week, I attended a free seminar at my local health food store. The seminar featured professional triathlete, plant-based nutrition expert, and bestselling author, Brendan Brazier. He shared how to thrive on a whole foods, plant-based diet. I sat right in front of him and noticed the shoes right away. We are matching in red […]

– It is still unusually warm in Southern California, it’s supposed to be 90 degrees this weekend. I hope our Halloween candies don’t melt. Because of the weather, we have been going to pumpkin patches in our sandals, shorts and linen shirts. At least we have stopped using the A/C at night and […]

Flower Market
I am trying to consume less coffee these days and I’m trying it out first with starting out the process by drinking coffee every other morning. On days I don’t drink coffee, I brew myself a huge pot of black tea and drink it throughout the day. I’m currently using Tazo Awake (black tea). I […]
Yogurt Blend
After resting all day, I am feeling a little better tonight. I think I drank gallons of water, probably ate a whole bag of clementines and drank Emergen-C every hour. I’ll do what it takes to get better. I am determined. I ate soup all day but the most exciting thing I ate was my […]
