Recipe - Christmas Morning Coffee Cake - Happy Home Fairy (1)

This coffee cake recipe is from my childhood babysitter, Mrs. Laudano. For years, Mrs. Laudano watched my brothers and me on Wednesday nights while my parents went to choir practice at the church. She liked to sit in the same spot on the couch the whole evening, dozing on and off. Every week I hoped she would sleep past our 8:30 pm bedtime, so that we could stay up late and watch TV, but she never did! Mrs. Laudano impressively woke up at 8:29 pm every time.

Aside from being gifted at punctual napping, Mrs. Laudano had the best recipe for homemade coffee cake. She liked to bring a cake to our family on Christmas Eve for us to enjoy the next morning. We looked forward to the way the coffee cake made the house smell while it baked.

This coffee cake is really easy to put together and the best part is that you do everything the night before! Refrigerate the cake overnight and then pop it in the oven while you relax and open presents together.

Ingredients

  • 2 cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ cup butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 beaten eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • Topping: ½ cup brown sugar, 1 teaspoon cinnamon, ½ teaspoon nutmeg (Mix ingredients together.)

Instructions

  1. Sift together flour, salt, soda, and baking powder. Set aside.
  2. Cream butter with both sugars. Add eggs and beat until fluffy.
  3. Add flour mixture alternatively with buttermilk, beginning and ending with dry ingredients.
  4. Add vanilla and blend well.
  5. Pour into greased 9"x13" pan. Sprinkle with topping. Cover with foil and refrigerate overnight.
  6. Bake at 350 degrees for 35 minutes.

        When you make something in a glass dish and refrigerate overnight, do you have to bring it to room temp before popping in the oven? or just start in a cold oven. I am wondering if glass would breakgoing atraight from fridge to oven. thanks
