Any reason not to use store-bought almond milk? I'm guessing about 1 cup?

My mother and grandmother used to bake this rice pudding in a pyrex dish in the oven and it formed a brown skin on the top which was the tastiest part to eat.

my love or rice pudding inherited from my mother - this recipe seems to be delicious, but.... so much time spent stirring!!!

To accentuate the Moroccan accent, consider soaking golden raisins in orange flower water while you make the pudding; sprinkle cooling pudding with the soaked raisins and drizzle with honey (Trader Joe's Turkish honey is a particularly good choice given the similarity in geography and flora bees forage on - also quite inexpensive). If you don't have powdered sugar, you can use regular and add a bit of cornstarch or tapioca starch (which is what powdered sugar is made with anyway).

Most commercial almond milk contains carrageenan or other "gums" that many health experts believe can negatively impact health. There is a growing info pool that you can look into to make your decision. There is a "Malk" brand of almond milk on the market that does not have additives - it is expensive if you drink a lot. I followed this recipe exactly, and was not happy with the result; a pot of sticky, boring, semi-sweet rice. I won't be making this again.

I bought orange flower water from Whole Foods. Also, nowadays commercial Almond milks like those from Costco or Califia Farms come without Carrageenan.

Was excited to make this after having Moroccan rice pudding at a restaurant. Made exactly as written. I did not find this to be anything special. Tasted like regular rice pudding to me, will not make again especially since it was a decent amount of work to prepare.

I found it takes twice as much almond milk as suggested...but I like it creamy. It's delicious!

Recipe is a bit confusing: talks about both milk and almond milk; doesn't list almond milk in the ingredients. Are the references to milk meant to be almond milk?

Store bought would be easier, but there is just almonds & water in what the recipe calls for. Much healthier IMO...

One could certainly use stor-bought almond milk, but like home made ricotta, it is a pale comparison--nothing like fresh; and, it is so easy and quick, Why not? I also make my own cashew cream/milk--so easy and can't tell the difference from cream in soups and even Fettucini Alfredo. I may try it with cashews.

I've been making plain rice pudding in my slow cooker. I think that would do nicely for this recipe. What are your thoughts?

You can transfer the rice pudding for those last 15 minutes to a Bain Marie method, it requires frequent but not constant stirring.

I am going to use Jasmine rice when I make this. Jasmine Rice cooks in 9 minutes, with a 5 minute rest.
