Top Tip

All you need to keep in mind is to use fresh good quality butter as that will enhance the flavor and aroma of these wonderful cookies. Traditionally these are made during Christmas and these cookies have Pecans in them. But I had replaced them with my selection of nuts.

Mexican Wedding Cookies

Ingredients

  • 2 cups all purpose flour
  • 1 cup butter at room temperature
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¾ cup nuts mix of walnuts, almonds and cashew nuts
  • ¼ teaspoon salt
  • 1 cup powdered sugar or icing sugar for dusting

Instructions

  • Begin by whisking together flour and salt in a bowl. Set the mixture aside.

  • Toast the nuts over low heat until they release their aroma without changing color. Then, pulse them coarsely in a mixer.

  • Beat butter and powdered sugar until creamy, then add vanilla essence.

  • Next, add the flour mixture and coarsely powdered nuts to the butter mixture. Mix well until a dough forms.

  • Cover the dough and refrigerate it for 30 minutes to 1 hour until it becomes firm.

  • Meanwhile, preheat the oven to 180 degrees Celsius.

  • Shape the dough into small balls, about the size of a large walnut, and place them on a cookie sheet with 1-inch gaps between each.

  • Bake the cookies for 12-15 minutes or until the edges begin to brown.

  • Remove the cookies from the oven and allow them to cool on the tray. While still warm, roll the cookies in powdered sugar or icing sugar, shaking off any excess.

  • Once cooled to room temperature, coat the cookies once more in powdered sugar just before serving or storing.
